Taste and Texture Thrill is Dragon Fruit.

I am not a fruit eater. That's because I'm not a sweet tooth and I try to limit my carbohydrate intake.
But my favourite fruits are pawpaw, dragon fruit and tomatoes.
Since I'm no fruit gormandiser, I seldom consume all of the fruity harvest from outback in the time frame before spoilage.
But if I dehydrate it...well then, I can eat at my leisure.
DRIED PAWPAW is a texture thrill. Better than jerky.
TOMATOES we all know...but the big surprise is DRAGON FRUIT.
Helen dislikes DF as she considers it tasteless. All texture. But dehydrated it is another taste altogether. Like the best tasting succulent jubes.
Amazing.
You don't want to dry it to leather (as there would be nothing left!), just semi-dried.
So remember that next Pitahaya season: dehydrate the harvest.
My Dragon Fruits are just finishing. (I do have a late season here on the coast) . But my Pawpaws are beginning the yellowing. The harvest so far has been excellent.And I'm soon to be over rum by Tomatoes.
One of the advantages of dehydrating in this cool weather is that you can use the heat generated to dry the fruits to warm the house.
FYI: Pawpaw , Tomatoes and Dragon Fruit are all low carb fruits.

I can also recommend dried persimmon. I don't mind them fresh but they can be a bit 'meh'. Dehydrated - delicious!

I have an Excalibur and I love it. It lives in the laundry though as it is quite big. When I have a glut, I like being able to do one large quantity in one go. Sugar bananas thinly sliced is our absolute favourite. I also dry my coffee when the harvest (which seems to be at random times) is not in summer.

Good Question Doug thanks - I've been wondering about getting a dehydrator too but cautious about cramming another appliance in the kitchen - can you dry out on low oven?

Gee whiz Dave, you are not a gormandiser, but a connoisseur maybe.  I love my pawpaw and have some for brekky most mornings.  We never even thought about dehydrating dragon fruit. Our old Narva might have to be pulled out of the shed.  Next week we hope to pull down a wall of dragon fruit that is climbing over my jaboticaba.  I would offer it around but this one flowers heaps but no fruit. Not sure if can be mulched, or munched.
