Glad to hear. I learned that trick from an old German man in Strassbourg. (True story).
Rinsing them did make a difference Andy. Valerie I will look onto the salting. The recipe I used had no sugar and honestly I prefer the sour taste without the sweetness.
Some recipes call for a salting process to get rid of the sourness. Most recipes have quite a bit of sugar in the brine.

You can give them a quick rinse. I do that with my sauerkraut.
This is my first attempt. Used basic apple cider vinegar, salt and water. Pepper corns added to the jars. One week in and they taste very vinegary but I like them.
Thant looks good. On my list definitely. Any recommendation on tried and tested recipes?
