From First Mess (available at BCC libraries) These are sweetened with a mashed banana and 3tbsp of maple syrup. Not too sweet. Just what I like for a healthy breakfast on the go.
Here was my recipe based on the First Mess book
1 1/4 cup Oats
1 tsp cinnamon
1/2 tsp Baking soda ( or powder)
1/2 cup almond flour (it worked with almond meal)
1/4 cup brown rice flour
1 mashed banana
2tbsp flaxseed meal (or linseed meal)
1/2 cup nut butter
3 tbsp. maple syrup
3 tbsp. liquid coconut oil
1 tsp vanilla (extract or paste)
1 cup of either or combination of dried fruit (I soaked dried cranberries) or nuts or seeds
Bowl 1: Mix dry ingredients
Bowl 2: Blend wet ingredients and flaxseed meal until smooth.
Mix both dry and wet with spatula (gently until just combined)
Bake squished blobs on sheet in 180C oven
According to the book they last on the bench for 5 days.
They lasted in my fridge for a week. (I ran out after that)
