Ingredients

2 large cucumbers cut into 5 mm slices
350g onions, sliced very thinly
50g salt
350 ml cider vinegar
350g sugar
2 level tbsp. Mustard seed
2 level tsp celery seed
¼ level tsp turmeric
¼ level tsp cayenne pepper


Method

Who needs cheese or meat? This pickle is so good that you can eat it with just the bread and butter.

Mix together the cucumbers, onions and salt in a bowl, stand for 3 hours.

Drain, rinse under the cold tap and drain thoroughly.

Bring the remaining ingredients to the boil in a stainless steel or an enamel pan and then add the vegetables.

Reduce the heat, bring just to the simmer and cook 2 minutes.

Pour hot into sterilized jars, making sure the liquid covers the cucumbers and seal.

  • I thought I would find an old pickling discussion and pick it up.   We have a bread and butter pickle recipe above.  I'd like to share a very easy red onion pickle recipe.

    Sweet Red Onion Pickle Recipe:

    Thinly slice 2 red onions.  (I halve lengthwise and then slice thinly). No need to cook.

    Tightly pack them in a jar.

    Pickle mix is: 

    To a saucepan add 1 cup of apple cider vinegar and one of water.  

    Add 1 tsp of salt, 1 tsp of sugar and (optional but recommended) a pinch of chilie flake.

    Bring the mix to a boil and then simmer for a few minutes.  

    Let it cool and add to the jar so the onion is covered.  You can top up with water or vinegar (either will work, I use water).

     

    The results are delicious:
