So, I have a problem at the moment. I have just worked through one bunch of 90 banana's-> banana muffins, banana smoothies, banana bread, frozen banana, dried banana and give aways. You name it, I've done it.
What's the problem you ask? Well, I have 2 more bunches of over 90 banana's each ready to start ripening. It's too much! This gives you an idea of how large the bunches are.
I started to look around for what else I can do with banana's and came across the idea of Banana flour. They use the green bananas, dry them then mill them. They are apparently high in "resistant starch" which passes through undigested. You can also use about 1/4 less than what a recipe calls for. All in all, it is low calorie, gluten free alternative to wheat flour.
I haven't tried it out yet but here is a site that tells you more about it and the other site tells you how to make it.
I think I might just give it a go these holidays.
I am STILL waiting for a bunch of bananas. I have four decent size trees and it's been way too long! Maybe I need to dig out a couple of suckers(or four or five...) to give them more energy to fruit?
Cathie, Maybe you planted water suckers. Do you know about spear suckers and water suckers. A water sucker has round leaves when young and a spear sucker is a tight pointy leaf sucker. Only the spear suckers are worth taking from the mother plant.
What variety of Banana plants do you have.
Christa, I actually was so excited that the previous bananas had put out spear/sword suckers that I could plant in a new spot so I was expecting a bunch within a year. These have been in about 18months. I noticed all the suckers that these ones have put out have sharp pointy leaves too. The variety is unknown, possibly what others call a sugar banana - short, thin skinned and with a tangy sweetness. I think they are absolutely divine.

Williams take 12 to 15 months (i.e. Cavendish)
Ladyfinger take 12 to 17 months
Ducasse take 11-19 months
Goldfinger take 15-17 months
Pacific Plaintain take 13 to 15 months
Dwarf Red Dacca take 15-21 months
I am not sure about any others, but as soon as you see signs of a flower coming through, give them a good dose of potassium if you can and that helps to get a big bunch.
Thanks a lot for that information Christa. I guess I've just been impatient after all! Good tip about potassium too. I've read they put out a 'flag' leaf that is significantly shorter than the others just before the flower appears so I'm looking out for that too.
Yes. Like lots of things, once you've seen it, it is easier to see next time. The flag is distinctly different.
One sucker for this year and perhaps one smaller as a backup. Too many suckers as you found delays or stops the production of fruit.
You should be getting a bunch within one year of planting a new stool. The commercial growers can do that from established stools, maybe a bit slower for we amateurs :-\ After the cyclones which destroyed a large part of the Queensland commercial Banana crop, we were eating ripe Queensland Bananas within a year of the cyclone.
Banana flour has been around for some years, probably made overseas though. We have used it along with Almond and Coconut flour. Different flours need different amounts of liquid and change the recipe a bit but unless you're into special baking like sponges or choux, shouldn't make much difference to the results. All gluten-free if that's an issue.
The process seems quite simple - dry out, then mill the dried banana. They do talk about using Plantain or cooking banana but you feel you can use regular banana to the same effect?
That's a lot of banana split ice-cream boat sundaes, remember them, with crushed nuts on top.

How about banana bread i think if going to cook with banana could put bananas in the freezer after they are ripe.
Peel them first! Tricky to get the peel off once it is frozen.
