Most plants do, especially organically/biodynamically grown and the yeasts even survive washing if Saurkraut is anything to go by. I didn't see Hugh F-W do any washing of the Elderflowers on River Cottage Spring but they at least would have had to have shaken off the excess bugs and other wildlife. Sourdough starter works the same way, you don't have to pay fancy prices for any 'starter'. The organic Rye works just fine by itself.

Watched some guys on TV make elderflower champagne the other day. Apparently it contains it's own yeast and bubbles up quite easily.
