Hi Dave, I have both Swiss and Parmesan in the 'Cave' / Fridge at the moment, my Parmesan will be there for a minimum of 18 months and the Swiss around 12 month depending when the 'Eyes' show development. 

I am happy to show you how to make cheese, though you might think I live to far from you. Message me if you are interested in coming out for a day. Cheers.. Dianne

I was interested in making 'Swiss' style or Parmesan. That's what I'm eating currently, even dependent on. Checked out the kits and noted per kilogram of cheese it is a viable option. However the temperature requirements of the fermenting process concerns my sub tropical perspective.

I was wondering if I could , if necessary, start simply, say, with a soft cheese like Camembert, and then transition using the same rig to the harder cheeses I seek. But then if I wanted to Swiss it, methinks, why not focus on that and study that option keenly per Dr Google.

It's dead easy Dave.  Basic cheeses require much less work than most of the other stuff that you and I do.

Boy am i tempted! Cheese is expensive...but cheese making while awesome seems such a commitment.
