So glad for your success Dianne. The photo of the cut loaf looks just like mine. I'll be interested if you get it much lighter. The texture is slightly denser than regular yeasted bread in my experience but as you say it is soft too - it does make superb toast. You will notice that it doesn't not brown as easily though, as it contains no sugar. Well done!
The texture is a little dense but soft, I know it is because I didn't leave it to Proof enough, I ran out of time. The Flavour is lovely a real Sour Dough Taste, but the Crust well that is just brilliant I couldn't have asked for better. I will proof more next time. Graham actually said all the above.
