It can also be caused by too loose a lid ring.  The main thing is it sealed.

Hi, Sophie, I have not tested my american canner as yet, I am waiting to get a glut of food.  One of the best hints given with regard to this canner, is to raise the heat slowly.  The owners, on videos, say they put in about 3 inches of water in the canner and let off steam for the first 10 mins and then put the correct weight on, Slowly let the pressure rise to the required pressure.  The aim is to keep the pressure steady. Bring it up to pressure slowly.  This prevents the jars from siphoning out. 

Good hard tempered glass jars suitable for pressure, is my choice, and replacing the lids after a long storage time.    

Hope you have better luck next time,  and end up with heaps of stored food in the future.

also argh lost 1 inch of liquid in each pint again - so frustrating; not sure what;s going wrong. Siphoning/liquid loss can be due to extreme temp change (avoid this this time!) or too tight jars (I really thought I was on top of this, this time. They all sealed at least and say, unless lost half liquid, ok to eat just might discolour a bit. Not graduating to meats until get this sorted!

100% agree re lid wastage. Tattlers, Harvest guard; same product by the sounds. 
I'm reusing lids to make signs for my fruit trees :)

I'm going on the hunt for re-usable lids.  I'll see what other brands are out there.  It just seems so environmentally unfriendly to be using once off lids.

Am waiting on the canner to come to pressure again :) This time - chickpeas :) Bought some extra lids online - wasn't a great deal but need them soon! I've been using the tom sauce and apple sauce - almost gone.. defies the point of canning really if used up so quick haha. I will keep look out for Tattlers lids - I reckon they'd be good to try.

Yes indeed.  Luckily it's only a sauce so you can't over cook it.

No loss at all Sophie.  Those ones got put in the fridge and will be used tomorrow.
