This was the recipe I used today for the lemon curd tea cake that everyone enjoyed.

Cake mixture

  • 300 grams Self Raising Flour
  • 120 grams Butter
  • 150 grams sugar
  • 2 egg

Lemon curd

  • 120 grams lemon juice
  • 120 grams Butter
  • 150 grams sugar
  • 2 egg

Cake:
Place all ingredients into a large bowl and beat well with electric mixer or food processor.
Lemon Curd:
Place all ingredients into a saucepan and whisk over medium-high heat until mixture boils and thickens slightly about 4 minutes.

Grease and line a round cake pan.
Spread half of the cake mixture over the bottom of the pan.
Pour lemon curd over cake mixture.
Sprinkle dollops of remaining cake mixture over top of lemon curd.
Bake in 180 degree Celsius oven for 1/2 an hour or until cake mixture is cooked through.

I made your Lemon Cake today and it turned out lovely. It reminded me of a Fruit Cobbler. I managed to get all the recipes made that I said I would do, plus a Humming Bird Cake (one of Graham's favourites). Thanks again for the Recipe
