Growing local

Just dug up my Ginger (Alpinia Galanga), and ended up tipping over the pot as that was easiest. We pulled up one piece which broke into 3 pieces. 

The white brown piece is obviously an old piece, do I throw that out.   The pink stem bases would be latest growth, do I keep bases and cut off knobbly parts and regrow them.  Can they be planted straight away.

The other ginger I pulled up was the West Indian type (West Indian Arrowroot (Maranta arundinacea) with long thick downward roots like an upside down parsnip.   Did not know what to do with them so replanted them in fresh soil.

Have not touched my Chinese Keys ginger and another potted ginger plant. 

Any advice is appreciated, I would like to freeze some, like Susan does in small pieces.

Looking good! Any old pieces which don't have obvious growing points will do well in the compost. You can replant now if you want to, we're heading for warmer weather.

The Maranta is an acquired taste, or it is not to mine anyway. Though plenty of members on BLF love it. It takes up a whole year of garden space as do Ginger and Galangal. Matter of whether you think it is worth it to you. The next garden visit I can get to I will take my Maranta hoping to find new homes for it rather than putting it through the mulcher.

I freeze washed Turmeric in meal-sized pieces. I expect that Galangal would freeze similarly to Turmeric.

Christa I haven't ever dug up galangal. I don't think it produces as much as regular ginger and I've mostly heard of just bandicooting it when needed. Do you use it in place of ginger or differently?

As a root, I'd suggest the standards:  

freeze, but accept that it gets kinda soft when de-thawed,

pickle - one of my favourites with ginger or

dry and powder (another of my favs).
