I do like moussaka but I'm not fond of egg plants., generally.
Back in the day (like 1971) of my early flush of Middle Eastern glow, I held a party I called a 'Moussaka Evening'. I must have fed 20 that night with that eggplant dish. I thought I was the bee's knees. We also did lamb kebabs using coat hangers.
Just the same I find moussaka 'a bit rich'. It needs yogurt on the side for toning down.
More recently I developed a passionate taste for Caponata -- the Sicilian eggplant stew or salad. Also a 'bit rich'. Ironically it requires vinegar.
Surprising taste. Herbs plus vinegar/hot or cold.
And I've always made a good Baba Ganoush which I think is the queen of flat bread dips. Best grill the eggplants rather than bake. Smokiness really adds so much to the favour.
I catered for a funeral once and my Baba Ganoush was a big hit with the living. Now there's a niche: funerals. Got paid well too. I really worked up a skill in the Meze menu such that Meze became my catering forte.
If Meze is one of the great menu options in the world it isn't possible without eggplant.
