Daniel's roast pumpkin soup with chicken and leek


Unfortunately nothing from my own garden yet, but tasty nonetheless...

 

Ingredients

  • Home-made chicken stock
  • Roast pumpkin (I used butternut and Queensland blue)
  • Miscellaneous chicken pieces without bones
  • Leek
  • Sage
  • Salt
  • White pepper

Method

  1. Chop leeks into disks, sautée in a tiny bit of your favourite oil/fat (I like macadamia oil, bacon fat or duck fat) and put aside
  2. Remove skin from roast pumpkin and add flesh to chicken stock
  3. Bring to the boil
  4. Blend with immersion blender until smooth
  5. Add salt and white pepper to taste
  6. Add sage to taste (but don't overdo it)
  7. Add leek and chicken pieces, simmer until chicken is hot.
  8. Eat a bowl
  9. Eat another bowl
  10. Collapse on sofa and watch a movie under a nice warm blanket

 

I didn't follow any recipe for this - it's all imprecise quantities of whatever I felt like putting in.

 

The end result is much more impressive in real life than the photo, trust me!

I regret not making the photo look better... it really was tasty! I've got the rest frozen and am taking it to work for lunch tomorrow.
Love step 9 & 10 ;)  Must make some pumpkin and sweet potato soup soon, all home grown ingredients waiting for me to use them!

This sounds delicious.

I don't have any home grown produce to use (yet), but will definitely try it out at the weekend.

Did you use two types of pumpkin for a reason Daniel?
