Made a yummy fresh bruschetta for dinner 95% from our garden:

Grated beetroot (unpeeled) x 1
Grated zuchinni x 1
Chopped tomatoes x 4
Crushed garlic x 2 cloves
Chopped fine beetroot leaves x 6 leaves
Chopped fine red onion x 1

Mix well & serve fresh on crisp sour dough bread topped with parmesan cheese
